^^ My kids love pancakes! L-O-V-E. But I usually don't have time to make them in the morning before we're off to school and daycare. Instead, I make a large batch of pancakes on a day when I do have the time. I cook them in silver dollar size, let them cool on the counter, then pack them up in large Ziploc and toss them in the freezer. You can make the pancakes from scratch using a recipe like THIS, or you can use a box mix. The nice part about making it from scratch is that you can control the quality of your ingredients, eliminating preservatives if that's your thing.
^^ On weekdays, I pull out some of the frozen pancakes and give them a quick reheat in the microwave. Just place the pancakes in stacks of 3 and heat until warm (approx 20 sec for one stack, 30 sec for two stacks, 40 sec for three stacks). Viola! Homemade breakfast in under a minute.
You can also precook French toast, letting it cool completely before freezing. Reheat frozen slices in the toaster or microwave and top with fresh fruit. And now you're probably thinking, Can't I just buy frozen pancakes and French toast? And the answer is yes, but making it yourself will save a boat load of money. Literally, I measured and it's a boat load. Enjoy!
